Veg Cannelloni

Ingredients:

For the stuffing-:
3 Cups mixed vegetables (French beans, carrot, peas, corn)
2 Potatoes
1 Onion finely chopped
1 tsp sugar
4 tbsp tomato ketchup
1 tsp red chilli powder (depending on taste required)
1 tsp oregano
1 tsp green chilli/ginger paste
2 tsp oil
salt to taste

For the Gravy -:
1 can chopped tomatoes
1 tbsp garlic paste
2 tsp sugar
1 tsp red chilli powder
4 tbsp tomato ketchup
2 tsp corn flour
salt to taste

Other-:
6 lasagna sheets
Grated cheese for topping
Butter for greasing

Method-:

For Stuffing-:

1) Boil the Potatoes and mix vegetables. While boiling add the sugar and some salt. This will ensure that colour of vegetables is maintained.

2)Heat Oil in non stick pan and add the oregano when little hot. Add the chopped onions and saute till light brown. Then add the other ingredients and mix well and cook for some more time to allow the masala to settle in. Keep aside.

For the Gravy-:

1) Blend the chopped tomatoes in a fine paste. Add all other ingredients and mix well.

2) Pour the mixture into a pan and boil for some time till the gravy is properly cooked.

Final preparation-:

1) Boil the lasagna sheets in a large vessel filled with water. Allow to boil till the sheets become soft and tender. Take care not to overcook else sheets will break. Remove the sheets and allow to cool.



2) As shown in pic above lay the boiled lasagna sheets on a plate and spread 3-4 tbsp stuffing on one half of the lasagna sheet. Fold the other half of the lasagna sheet over the stuffing so as to close it. Repeat this for remaining sheets. Alternately you can roll the Lasagna sheets lengthwise into a tube and stuff the tubes.



3) Grease a baking tray and spread some gravy on it. Arrange the stuffed lasagna sheets in the tray as shown in pic above. Spread the remaining gravy over the sheets such that they cover the sheets completely.

4) Sprinkle grated cheese over it and bake in a pre heated oven at 200C for approx 10 mins till the cheese turns brown.
